Menu rotation cycle

Wood-fired oven at Olive & Ember — flames leaping inside the brick arch, sparks rising, chef working in the open kitchen behind the hearth

The open hearth

No gas in the kitchen.

Every main course passes through the open wood-fired hearth — not as an aesthetic, but as a cooking method. The smoke, the char, and the timing are part of the recipe.

We follow the ingredients, not the calendar. When the season peaks, the menu changes. Twelve farm and ranch partners across Oregon and Washington drive what lands on the plate.

The menu

Four ways to eat at Olive & Ember.

Small Plates

Seven to nine dishes designed for sharing. Order three, eat slowly, order more. Charred broccolini, lamb flatbread, fire-roasted octopus — each plate built to stand on its own and work alongside others.

Wood-fired Mains

Every main course passes through the open hearth. Pacific branzino. Lamb chops with pomegranate reduction. Herb-brined chicken with chermoula. Cooked over Pacific Northwest hardwood, made to order, served immediately.

Seasonal Boards

House-made hummus, baba ghanoush, marinated olives, and warm pita as a table-starter. Our mezze board has been on every version of the menu. Order it first — the table will thank you.

Natural Wine List

Eighty-plus bottles with an emphasis on biodynamic and minimal-intervention producers from the Mediterranean basin and the Willamette Valley. Our sommelier rotates the by-the-glass list seasonally.
